Rarely does it get easier than this. A filo switch-up on the classic toasty that is full of flavour and filo crunch.
5 sheets of filo pastry – cut in half
Olive oil for brushing
150g shaved ham
2 cups grated tasty cheese
2 tbsp grainy mustard
1 egg & 1 TB water for egg wash
Garnish with sesame seeds and serve with a good tomato chutney or sauce.
Preheat oven to 200C.
Place a half filo pastry sheet on a baking tray and using the olive oil, brush each sheet as you layer until 5 sheets are used. Repeat with the remaining sheets to form the top layer of pastry.
Spread the grainy mustard on top ensuring that you leave a 2 cm border around the edge, scatter 1 cup of the grated on top then place the shaved ham and finally the remaining cup of cheese.
Brush the egg wash around the edges of the pastry bottom then place the other layer on top. Go around and gently pinch the edges together. Finally brush the top with the egg wash. Scatter with the sesame seeds or fresh herbs of choice.
Bake for about 20 – 25 minutes or until golden brown.
